Executive Chef Edward Reyes shares some secrets to his famous grill.
The steaks are the most popular dishes on the menu and the key to ensuring a mouth watering juicy steak are firstly, to source great quality produce and secondly, the secret marinade.
Chef Edward says:
“Our beef is sourced from three different regions namelyPortland, Gippsland andTasmania. We marinate the beef with different herbs and spices to infuse flavour and they are basted during the grilling process.
Your meal is complemented with your choice of fries or mashed potato, corn on the cob and your choice of sauce.
I have include my secret spice rub marinade recipe for you to enjoy your BBQ”.
Chef Edward Spice Rub Recipe:
10 grams cracked black pepper
5 grams cayenne pepper
5 grams dried basil
30 grams paprika
85 grams brown sugar
20 grams salt
10 grams garlic powder
10 grams onion powder
10 grams dry mustard
30 grams beef stock powder
* Combine all the ingredients and add a little water to moisten and make a paste.
* Rub on to any piece of meat, chicken or fish and marinate overnight.
* Best enjoyed when cooked over a BBQ grill.
